I don't count coffee as breakfast but I have a double or triple espresso every morning minus shabbos.

I usually eat my breakfast after 10. Does that make a difference?
I agree the steak sounds strange but its just a matter of habit imo. Many people have cholent and kugel on an empty stomach on shabbos morning and it doesn't seem to strike many people as strange.

Steak and eggs is a fairly common breakfast.

Steak is no weirder than sausage or bacon. I'd certainly have steak before either of those.
